Adventures In Beefy Goodness
I haven’t posted a recipe for awhile, so I thought this might be a good time to publish another quick and easy meal. I call this one Quick Korean Beef, which I have adapted from some recipes I found on the interwebs. I have another version of this that uses cubed beef and cooks in the crockpot, but it’s more work, tastes about the same, and takes a lot longer. This dish takes about 20 minutes to make from start to finish, assuming you have rice already made up.
Prep your ingredients, then brown your beef. Drain off the excess fat. I like to use a paper towel to do this.
Add in most of the rest of your ingredients, including your grated fresh ginger, garlic, brown sugar, low-sodium soy sauce, sesame oil, the fresh pepper (as much or as little as you like), and sriracha sauce. If you choose to use jarred garlic like I do (so convenient!), you’ll want to at least double the amount called for by the recipe. I put in roughly 1 1/2 Tbsp. Also, do not make the mistake of using regular soy sauce or this dish will be WAYYYYY too salty. Ask me how I know.
Let this cook for around 10 minutes or so, to let the flavors meld a bit, then add in half your chopped green onion, serve over hot rice, and garnish with the rest of the green onion. So easy! And genuinely delicious.
A couple notes…if you don’t have sriracha, you can use some other hot sauce, although I think sriracha gives the best flavor for this dish. Add as much or as little as you want, depending on your tolerance for heat. My tolerance is rather low, so I don’t add very much. If you don’t have fresh ginger root, you can substitute about 1/4 tsp of ground ginger, but it won’t taste quite as good.
There you go! That’s it…four servings of a genuinely delicious dish. Enjoy.
Quick Korean Beef
INGREDIENTS
1 pound lean ground beef
freshly ground black pepper to taste
5 cloves garlic , minced
1 Tablespoon sesame oil
1 Tablespoon freshly grated ginger *
2/3 cup light brown sugar
1 cup low-sodium soy sauce
1 T Sriracha hot sauce
1 bunch green onion , chopped
rice for serving
DIRECTIONS
Brown the beef in a large skillet over medium high heat. Remove excess grease.
Add remaining ingredients except for green onion and cook for 10 minutes.
Add half of the chopped green onions, reserving the rest for garnish. Serve over hot cooked rice, garnished with remaining chopped green onion.
NOTES
*fresh is best for this recipe, but could substitute 1/4 teaspoon ground ginger.
